A Rich Tomato Sauce with Incredible Depth

One particularly delicious variation combines different types of tomatoes to create extra complexity.

Using yellow tomatoes alongside peeled red tomatoes and small cherry tomatoes produces a sauce with remarkable balance. The yellow tomatoes contribute natural sweetness, the peeled tomatoes provide body and richness, while the cherry tomatoes add concentrated flavour.

Ingredients

  • 400 g spaghetti
  • 1 tin yellow tomatoes
  • 1 tin peeled plum tomatoes
  • 1 tin cherry tomatoes
  • 2 garlic cloves (left whole, skin on)
  • A generous splash of extra virgin olive oil
  • Fresh basil leaves
  • Sea salt
  • Freshly ground black pepper

Method

  1. Heat a generous amount of extra virgin olive oil in a large frying pan.
  2. Add the whole garlic cloves and gently infuse the oil.
  3. Add all three varieties of tomatoes together with the basil.
  4. Simmer for around 10–15 minutes, gently crushing the tomatoes with a spoon as they soften.
  5. Remove the garlic.
  6. Pass the sauce through a fine sieve or food mill until smooth.
  7. Meanwhile, cook the spaghetti in generously salted water until just al dente.
  8. Transfer the pasta directly into the sauce, adding a ladle of pasta water.
  9. Toss continuously until the sauce becomes glossy and coats every strand.
  10. Finish with fresh basil and an extra drizzle of premium olive oil.

Because the sauce is fresh rather than heavy, it pairs beautifully with elegant Italian wines.
