For the Layers

  • 250g savoiardi (Italian sponge fingers)
  • 150ml limoncello
  • 150ml chilled water
  • Juice of 1 lemon

To Finish

  • Fresh lemon zest
  • Thin slices of candied lemon
  • Fresh mint leaves
  • White chocolate curls (optional)

Method

Begin by whisking the double cream until it forms soft peaks.

In a separate bowl, gently mix the mascarpone with the icing sugar, vanilla extract, lemon zest and limoncello until smooth. Fold the whipped cream into the mascarpone mixture using a spatula, taking care to keep the mixture light and airy.

Mix the limoncello, chilled water and lemon juice in a shallow bowl. Briefly dip each sponge finger into the liquid for just one or two seconds. They should absorb flavour without becoming soggy.

Arrange a layer of soaked sponge fingers in the base of a serving dish. Spread half of the mascarpone mixture evenly over the biscuits.

Repeat with another layer of sponge fingers followed by the remaining cream.

Cover and refrigerate for at least six hours, although overnight will produce the finest texture and flavour.

Before serving, decorate with finely grated lemon zest, slices of candied lemon, fresh mint and, if desired, delicate curls of white chocolate.
