Ingredients (Serves 4)

  • 4 salmon fillets (approximately 170–180g each)
  • 2 medium onions, finely diced
  • 4 garlic cloves, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 4 anchovy fillets in olive oil
  • ½ teaspoon dried chilli flakes
  • 800g good-quality chopped tomatoes or passata
  • 120g Kalamata or Taggiasca olives, pitted
  • 3 tablespoons capers, drained
  • 1 teaspoon dried oregano
  • Sea salt and freshly ground black pepper
  • A generous handful of fresh flat-leaf parsley, chopped
  • Extra virgin olive oil for serving

  • Crusty sourdough bread
  • Creamy mashed potatoes
  • Steamed spinach or grilled asparagus

Method

Preheat the oven to 190°C (170°C fan).

Heat the olive oil in a large ovenproof frying pan or shallow casserole over a medium heat. Add the onion and cook gently for around five minutes until softened. Stir in the garlic, anchovy fillets and chilli flakes, allowing the anchovies to dissolve into the oil.

Add the chopped tomatoes, oregano, two-thirds of the olives and two-thirds of the capers. Simmer gently for around 15 minutes until the sauce has thickened slightly and the flavours have developed. Season with freshly ground black pepper and a little sea salt if required.

Nestle the salmon fillets into the sauce and spoon a little sauce over each fillet. Transfer the pan to the oven and bake for 12–15 minutes, depending on the thickness of the salmon. The fish should remain slightly translucent in the centre for the best texture.

Remove from the oven and scatter over the remaining olives, capers and chopped parsley. Finish with a generous drizzle of extra virgin olive oil before serving.

Serve immediately with fresh pasta, crusty bread or seasonal vegetables.
